    Global production of plastics has increased dramatically in recent decades and is considered a major threat to marine life and human health due to their stability, persistence, and potential to move through food chains. The study was conducted to detect, identify and quantify microplastics (MP) in the gastrointestinal tract (GI) of some commercial fish species in the North Persian Gulf in Bushehr Province: Psettodes erumei, Sphyraena jello, Sillago sihama, Metapenaeus affinis and Portunus segnis. A total of 216 plastic particles were collected from 102 individuals (72.68% of all sampled individuals; MP prevalence of 85.1% for M. affinis, 80% for P. segnis, 70% for P.erumei, 60.3% for S.sihama, 45.2% for S.jello). The average number of microplastics per organism was 2.26 ± 0.38 MP/ind (considering only species that ingested plastic, n = 102) and 1.51 ± 0.40 pieces/ind (considering all species studied, n = 140). Microfibers accounted for 58.49% of the total microplastics, followed by fragments (33.02%) and pellets (8.49%). The most common color of microplastic was black (52.83%), followed by blue (22.64%) and transparent (15.09%). The length of microplastic ranged from 100 to 5000 μm with an average of 854 ± 312 μm. Microplastics were significantly (p S. jello (plastic in 45% of individuals studied). The main synthetic polymers identified by Fourier transform infrared spectroscopy (FTIR) were polyethylene (38%), polypropylene (24%), polystyrene (17%), polyethylene terephthalate (11%) and polyamide (10%). The pollutant load index and lifetime accumulation index were calculated to identify the most polluted species and their toxicity to human health. The white shrimp M. affinis was identified as the most polluted and toxic species for MP based on PLI. The present study can provide valuable data for further research and a background for the control and monitoring of this pollutant in the coastal environment of Bushehr province.

    Mung bean protein isolate was texturized at different feed moisture contents (30.0, 49.3, and 60.0%) at a constant temperature (144.57 °C) to evaluate the changes in protein profile, solubility, thermal, structural (at secondary and tertiary levels) and rheological properties. SDS-PAGE, surface hydrophobicity, circular dichroism, FTIR spectroscopy, and fluorescence analyses revealed protein unfolding, aggregation, and structural rearrangement as a function of feed moisture content. Extrusion at 49.3% feed moisture produced texturized mung bean protein (TMBP) with favourable partial denaturation, the formation of small aggregates, improved solubility, and digestibility with strong gel forming behaviour, whereas 30.0 and 60.0% moisture content resulted in complete protein denaturation, the undesirable formation of large aggregates and weak gels. In conclusion, protein denaturation and formation of aggregates can be controlled by manipulating feed moisture content during extrusion, with 49.3% feed moisture prompting favourable partial denaturation to produce TMBP with desirable qualities for use as a vegetarian-based meat extender.

    Mung bean is an inexpensive yet sustainable protein source. Current work compared the effects of freeze (FD), spray (SD) and oven drying (OD), on mung bean protein isolate (MBPI) produced on pilot scale. All samples showed no dissociation of protein subunits and were thermally stable (Td = 157.90-158.07 °C). According to morphological studies, FD formed a porous protein while SD and OD formed wrinkled and compact crystals, respectively. FD and SD formed elastic gels with better gelling capacity than OD (aggregated gel). FD showed exceptional protein solubility, water and oil absorption capacity (4.23 g/g and 8.38 g/g, respectively). SD demonstrated the smallest particle size, excellent emulsion activity index (29.21 m2/g) and stability (351.90 min) and the highest β-sheet amount (37.61%). FTIR spectra for all samples showed characteristic peaks which corresponded well to the secondary structure of legume proteins. Rheological analysis revealed that gelation temperature for all MBPI lied around 90 °C. Current work described the different final properties achieved for MBPI produced under different drying techniques that allowed tailoring for different food systems, whereby FD is ideal for meat extender, SD is suitable for meat emulsion while OD is suitable in general protein-based application.

    In this study, microplastic (MP) pollution in the coastal sediments and tidal waters of Bushehr province in the Persian Gulf was comprehensively investigated. The sampling stations were selected based on their proximity to various human activities in January and February 2022, such as tourism, fishing, urban development and industry. The results showed that the abundance of MP associated with different human activities varied. The highest concentrations were observed near the petrochemical industry in Asaluyeh, followed by the densely populated Bushehr and the fishing port of Dayyer. Other areas such as Ganaveh, Deylam and Mand also showed varying levels of MP contamination. The average MP concentration was 1.67 × 104 particles/km2 in surface water and 1346.67 ± 601.69 particles/kg in dry sediment. Fiber particles were in the majority in both sediment and water samples, mainly black. The sediment samples had a size range of 100-500 μm (41.34 %), while the water samples were between 500 and 1000 μm (33.44 %). The main polymers found were polyethylene (PE) and polypropylene (PP). This assessment highlights the widespread problem of microplastic pollution in the coastal and intertidal zones of Bushehr province in the Persian Gulf.

    Chalcone derivatives are an extremely valuable class of compounds, primarily due to the keto-ethylenic group, CO-CH[double bond, length as m-dash]CH-, they contain. Moreover, the presence of a reactive α,β-unsaturated carbonyl group confers upon them a broad range of pharmacological properties. Recent developments in heterocyclic chemistry have led to the synthesis of chalcone derivatives, which have been biologically investigated for their activity against certain diseases. In this study, we investigated the binding of new chalcone derivatives with COX-2 (cyclooxygenase-2) and HSA (Human Serum Albumin) using spectroscopic and molecular modeling studies. COX-2 is commonly found in cancer and plays a role in the production of prostaglandin E (2), which can help tumors grow by binding to receptors. HSA is the most abundant protein in blood plasma, and it transports various compounds, including hormones and fatty acids. The conformation of chalcone derivatives in the HSA complex system was established through fluorescence steady and excited state spectroscopy techniques and FTIR analyses. To gain a more comprehensive understanding, molecular docking, and dynamics were conducted on the target protein (COX-2) and transport protein (HSA). In addition, we conducted density-functional theory (DFT) and single-point DFT to understand intermolecular interaction in protein active sites.

    Over recent years, carbon quantum dots (CQDs) have advanced significantly and gained substantial attention for their numerous benefits. These benefits include their simple preparation, cost-effectiveness, small size, biocompatibility, bright luminescence, and low cytotoxicity. As a result, they hold great potential for various fields, including bioimaging. A fascinating aspect of synthesizing CQDs is that it can be accomplished by using biomass waste as the precursor. Furthermore, the synthesis approach allows for control over the physicochemical characteristics. This paper unequivocally examines the production of CQDs from biomass waste and their indispensable application in bioimaging. The synthesis process involves a simple one-pot hydrothermal method that utilizes biomass waste as a carbon source, eliminating the need for expensive and toxic reagents. The resulting CQDs exhibit tunable fluorescence and excellent biocompatibility, making them suitable for bioimaging applications. The successful application of biomass-derived CQDs has been demonstrated through biological evaluation studies in various cell lines, including HeLa, Cardiomyocyte, and iPS, as well as in medaka fish eggs and larvae. Using biomass waste as a precursor for CQDs synthesis provides an environmentally friendly and sustainable alternative to traditional methods. The resulting CQDs have potential applications in various fields, including bioimaging.

    A new series of ternary metal complexes, including Co(II), Ni(II), Cu(II), and Zn(II), were synthesized and characterized by elemental analysis and diverse spectroscopic methods. The complexes were synthesized from respective metal salts with Schiff's-base-containing amino acids, salicylaldehyde derivatives, and heterocyclic bases. The amino acids containing Schiff bases showed promising pharmacological properties upon complexation. Based on satisfactory elemental analyses and various spectroscopic techniques, these complexes revealed a distorted, square pyramidal geometry around metal ions. The molecular structures of the complexes were optimized by DFT calculations. Quantum calculations were performed with the density functional method for which the LACVP++ basis set was used to find the optimized molecular structure of the complexes. The metal complexes were subjected to an electrochemical investigation to determine the redox behavior and oxidation state of the metal ions. Furthermore, all complexes were utilized for catalytic assets of a multi-component Mannich reaction for the preparation of -amino carbonyl derivatives. The synthesized complexes were tested to determine their antibacterial activity against E. coli, K. pneumoniae, and S. aureus bacteria. To evaluate the cytotoxic effects of the Cu(II) complexes, lung cancer (A549), cervical cancer (HeLa), and breast cancer (MCF-7) cells compared to normal cells, cell lines such as human dermal fibroblasts (HDF) were used. Further, the docking study parameters were supported, for which it was observed that the metal complexes could be effective in anticancer applications.

    Under conventional and silica-supported Muffle furnace methods, water-soluble substituted trimeric triaryl pyridinium cations with various inorganic counter anions are synthesized. The solvent-free synthesis method is superior to the conventional method in terms of non-toxicity, quicker reaction times, ease of workup, and higher yields. Trimeric substituted pyridinium salts acted as excellent catalytic responses for the preparation of Gem-bisamide derivatives compared with available literature. To evaluate the molecular docking, benzyl/4-nitrobenzyl substituted triaryl pyridinium salt compounds with VEGFR-2 kinase were used with H-bonds, π-π stacking, salt bridges, and hydrophobic contacts. The results showed that the VEGFR-2 kinase protein had the most potent inhibitory activity. Intriguingly, the compound [NBTAPy]PF6- had a strongly binds to VEGFR-2 kinase and controlled its activity in cancer treatment and prevention.
